This Mediterranean Frittata consist only of healthy and delicious ingredients, but most important of all is that only contains 178 calories per serving. Simple and delicious recipe for lunch with friends or family.

Ingredients:

  • 2 tablespoons olive oil
  • 3/4 cup of spinach
  • 2 scallions
  • 4 egg whites
  • 6 large eggs
  • 1/3 cup feta cheese with chopped parsley and dried tomato
  • 2 teaspoons mixed spice
  • 1/4 teaspoon salt

Preparation:

  1. Heat the olive oil in a pan. Meanwhile chop spinach and scallions. Mix egg whites, eggs, cheese, spices and salt in larger bowl. Add spinach and scallions to the bowl and stir everything together.
  2. Add the mixture to the frying pan and fry until the edges begin to curl. Cook over medium heat, until the whole mixture is well fried and until frittata is golden. Transfer the frittata on a large plate. Cut into pieces and serve.
  3. The nutritional value per serving is 178 calories, 15.7 g protein, 12 g fat, 326 mg cholesterol and 2.2 g carbohydrates.
